Baku stacks a UNESCO-listed medieval Old City against a skyline of flame-shaped towers that ripple with fire animations after dark — and that's before the day trips get strange, in the best way: 40,000-year-old rock carvings at Gobustan, bubbling mud volcanoes, and Yanar Dag, a natural-gas hillside that has burned for decades.
